 baingan bharta

Ingredients
1 big  eggplant /baingan
Jeera and mustered seeds
1 t. Sp green chillie crushed (adjust according to taste)
1 t.sp garlic and ginger grated
1 cup chopped spring onion
1/2 cup chopped coriander leaves
1/4 cup peanuts
salt per taste
3 tablespoons oil
Wash brinjal and  rub some oil to the surface of the brinjal  and roast over direct flame. After  Peel off the black skin and take only the inner flesh of the eggplant. Mash  baingan with a spatula.Heat the 3 table spoon of oil in a flat pan. Once oil is hit enough, add jeera and mustered seeds. Put  crushed ginger and garlic and green chili crushed, add peanuts, then green onion and coriander too. After few minutes add mashed brinjal  don't mix keep it few minutes brinjal will observed oil.Then add salt.  Mix and lower the flame let it cook. Serv with Bhakari.

veg chapli kabab

Ingredients
grated  bottle gourd  1 bowl
Half bowl oats powder
Gram flour 3 tbsp roasted
Coriander seeds 2 tbsp (crushed)
Pomegranate seeds 1 tbsp
Corn 1 tbsp
Red pepper 2 tbsp (crushed)
Turmeric powder 1 tbsp
All spice powder 1 tbsp
Salt to taste
Tomatoes 1
Onion 1
Green chilies 2
Coriander leaves ¼ bunch
Oil for fry
Cooking Directions
In a bowl mix together  gram flour and oats powder, crushed coriander seeds, pomegranate seeds, crushed red pepper, turmeric powder, all spice powder and salt.
Finely chop tomatoes, onion, green chilies and coriander leaves.
Add vegetables in mixture.
Mix very well.
Form large patties with the  mixture.Then  fry in a large griddle until golden brown
